Summer Squash is not a vegetable per se, it’s technically referred to by horticulturists and plant scientists as a “pepo” which is a type of hard-walled berry. Cucumbers and watermelon are described as pepo as well. Summer squash is a vining plant that can include so many different types of squash, from yellow squash to zucchini and are grown and harvested in the summertime and are in season right now on our farm.

We  grow a variety of summer squashes including these varieties;  zucchini, patty pan, crookneck, cousa, speckled, sundrop and round (AKA 8 ball). Our production team prefers to harvest it before the fruit is ripe, keeping the skin delicate and edible for optimum nutrition and flavor.

Some historians believe that Squash may be one of the oldest crops evidenced by drawings and archeological findings in Mexico dating back to approx. 10,000 years ago.  It is said that the origin of the word squash may come from an Algonquin Indian name symbolic for “eaten raw”.

 Summer squash is infamous for being plentiful once it becomes in season so you can find it at our farm store, our farm stands, and at our farmers markets from approximately June through September. There are so many wonderful recipes that you can try while summer squash is plentiful and in season. 

They are truly very versatile and you can incorporate them raw in many of your home recipes especially breads, muffins and cakes, soups, tacos and other main entrees. They will last a while in the refrigerator, are excellent for freezing or try canning or pickling them to savor the season. Our website contains tips for freezing, click here for more information. 

The healthiest way to eat summer squash is raw, however it is very tasty when steamed, broiled, baked, sautéed, grilled or air fried.
