Kohlrabi is a cruciferous vegetable in the same family as cabbage, broccoli and kale. Also known as German turnip, it is popular in Eastern European countries and is actually a bulbous vegetable that grows with stiff leaves attached and the entire plant can be eaten raw or cooked.

Popular in dishes from raw salads and slaws to soups and stews and everything in between. Kohlrabi can be cubed and roasted, diced and sautéed or hallowed out and stuffed and baked. The greens can be steamed or sautéed and used in preparations as you would kale or cabbage. 

The kohlrabi has a tough outer peel on the bulb that needs to be removed before using. Only remove the peel if intending on eating, leaving the outer skin intact will help keep it fresher for storage.  Kohlrabi can be stored in the refrigerator for several weeks by simply placing it in a sealed bag with holes in it. It’s best to eat the greens right away or freeze to preserve for a later sauté. 

This cool season crop is grown for its nutritious bulb, leaves and stem as well as for it’s long shelf life qualities. Maturing quickly we plant this crop two times a year, in the spring and late summer for a late fall or early winter harvest. Kohlrabi is very versatile and the flesh is said to taste slightly sweet and crispy. We’ve harvested some kohlrabi from our farm that reminded us of apples. Low in calories and a good source of vitamin and minerals, fiber and calcium as well as antioxidants and phytochemicals, it’s a good choice for all.
