Rhubarb is a vegetable often put into the same culinary uses as fruits. Rhubarb consists of red stalks (similar in texture to celery) with long green leaves which are non-edible. Considered a powerhouse veggie rhubarb is rich in phytochemicals, phenols, as well as other vitamins, minerals and nutrients. 

Rhubarb is in season April through June and is harvested in its second year of growing. It grows well in a sunny to semi shaded location and is harvested by cutting the stalk stems with a sharp knife at ground level. Rhubarb may be eaten raw but due to its tart flavor is typically cooked with a sweetener or another fruit, most commonly in pie! Enjoy this video view of our rhubarb in our fields while in season! 

Now is a good time to plant rhubarb in your garden. Make sure to select a sunny spot with well drained soil. Our rhubarb plants that we use on our farm are available for sale in our farm store for you to plant in your home garden. Rhubarb is a perennial plant that will produce stalks in season for up to 8 years. 

Store fresh rhubarb in a refrigerator for approximately 3-5 days by placing the stalks in a bag to retain moisture. It can also be cooked and preserved or frozen to keep for up to one year. To freeze, cut the stalk into 1” pieces and place in the freezer on a single layer cookie sheet. Once frozen solid, move pieces into an airtight container or zip top bag making sure to draw out air with a straw before sealing.
