Greens is a common term used to describe the leaves of green vegetables that are eaten as food. Greens comprise a wide list of vegetables that we grow on our farm, including; kale, arugula, spinach, lettuce, sorrel, mizuna, swiss or rainbow chard, mustard greens, Tatsoi to name a few. Greens are not only limited to vegetables that are grown for their leaves, greens may also comprise the edible leaves of produce such as beet greens, radish greens and turnip greens. These vegetables are typically harvested for their roots and the greens are an added healthy bonus! Learning to use the entire part of fruits and vegetables is not only sensible, it’s environmentally friendly, more economical, and healthier for you. Health experts say that greens are a good choice to incorporate into your daily diet as they are rich in fiber, antioxidants, vitamins and minerals along with contributing to the hydration of the body. There are so many wonderful ways to use greens which makes them so much more appealing, give it a try. Try using raw greens in salads or smoothies. Check out this recipe for mizuna three ways or beet smoothies.  Raw greens can be added to sandwiches and wraps or wilted in soups and stews.
