**Ingredients:**
* 8 oz cooked chicken breast, diced into 1″ cubes
* 2 oz red seedless grapes, cut in half
* 2 oz honey roasted cashews
* 1 oz dried cranberries
* 1 celery stalk, small dice
* 2 oz mayonnaise
* 1 oz fresh whipped cream*
* 2 oz Pomegranate seeds
* Salt and pepper to taste
**For the Whipped Cream:**
* 8 oz heavy whipping cream
* 1 tsp vanilla extract
* 2 oz confectioners’ sugar
**Instructions for Whipped Cream:**
Whip all ingredients until soft peaks form.
**Method:**
Combine all prepped ingredients. Gently fold in the mayonnaise and whipped cream. Season to taste with salt and pepper.
**Variation:**
Serve on a bed of romaine lettuce.
