Ingredients:
4 ears Alstede Fresh sweet corn, roasted and kernels removed
1 lb. cream cheese
1 cup sour cream
2 red bell peppers, diced
2 green bell peppers, diced
1/2 red onion, diced
2 oz. chipotle in adobo
2 oz. lime juice
1/2 cup chopped cilantro
Directions:
Combine all ingredients (except cilantro) in a pot. Cook on low until cream cheese melts and the mixture is smooth.
Stir in cilantro. Serve warm.
