- 1¼ pounds carrots, shaved into ribbons or grated
- 2 scallions, thinly sliced
- ½ cup chopped fresh parsley
- ¼ cup chopped fresh mint
- ½ cup fresh blueberries
- Optional: a handful of baby arugula or baby spinach or other fresh greens

- ¼ cup chopped Medjool dates
- ¼ cup toasted pistachios or sliced almonds
- Zest and juice of one orange
Citrus-Cumin Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons fresh orange juice
- 1 teaspoon orange zest
- 2 teaspoons local honey
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- Pinch of cinnamon
- Pinch of cayenne (optional)
- ½ teaspoon sea salt
- Freshly ground black pepper
- 1 small garlic clove, grated
Directions
- Using a vegetable peeler, shave the carrots into long ribbons for an elegant presentation, or grate them for a finer texture.
- In a small bowl, whisk together the olive oil, vinegar, orange juice, orange zest, honey, cumin, coriander, cinnamon, garlic, salt, pepper, and cayenne.
- In a large serving bowl, combine the carrots, scallions, parsley, mint, dates, blueberries, and pistachios.
- Pour the dressing over the salad and gently toss until evenly coated.
- Let the salad rest for 10–15 minutes before serving to allow the carrots to absorb the citrus and spice flavors. Garnish with additional mint, orange zest, and toasted pistachios.
