Quick Alstede Fresh Tomato Marinara

Skip the jar and let your homegrown tomatoes shine! This fresh marinara comes together in about 20 minutes and is perfect for pasta, pizza, or casseroles.

  • 4–5 ripe tomatoes, chopped
  • 1 bunching onion (white or red), thinly sliced
  • 2 cloves garlic, minced
  • A handful of fresh basil, chopped

  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon honey (optional)

Directions

  1. Heat olive oil in a saucepan over medium heat. Add the sliced bunching onion and cook for 3–4 minutes until softened.
  2. Stir in the garlic and cook for 30 seconds.
  3. Add the chopped tomatoes, salt, pepper, and honey, if using.
  4. Simmer for 15–20 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.
  5. Stir in the fresh basil during the final minute of cooking. For a smoother sauce, blend with an immersion blender before serving.

Farm Fresh Tip: Double the recipe and freeze extra sauce in pint containers for an easy taste of summer any time of year. Prepare this recipe in a slow cooker, set on low and let bubble away for 6-8 hours.
