Alstede Fresh Apple Salsa

Crisp apples, fresh herbs, and a sweet-tart honey-apple cider dressing come together in this refreshing salsa with a hint of jalapeño heat (optional). Serve with tortilla chips or alongside grilled chicken, pork, or fish. A great way to get children to eat more fruits and vegetables!

Ingredients

  • 2 cups peeled, finely diced apples (use a blend of sweet and tart varieties)
  • ½ cup diced red bell pepper
  • ¼ cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon finely chopped fresh mint (optional)
  • 1 small jalapeño, seeded and minced (optional)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons apple cider
  • 1 tablespoon Alstede Farms Honey
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Directions

  1. In a medium bowl, combine the apples, red bell pepper, red onion, cilantro, mint, and jalapeño.
  2. Gently warm the apple cider and honey until blended. Remove from heat and cool completely. Whisk in the lime juice.
  3. Pour the dressing over the apple mixture. Season with salt and pepper, then toss gently to combine.
  4. Refrigerate for 15–20 minutes to allow the flavors to meld. Stir before serving.

Yield: 6–8 servings

Alstede Fresh Tip: Combine a sweet apple with a crisp, tart variety for a balanced flavor. For the best texture, dice the apples just before preparing the salsa. Tailor the size of the apples and peppers to your individual preferences, fine or coarse pieces.
