Made with farm-fresh roasted peppers, tomatoes, onions, and garlic.
A vibrant, savory sauce made almost entirely from Alstede Farms’ late-summer vegetables. Roast everything until caramelized, then blend into a rich sauce that’s delicious with grilled vegetables, chicken, fish, pasta, sandwiches, or crusty bread.
Ingredients
- 3 large sweet red peppers, halved and seeded
- 4 medium ripe tomatoes, quartered
- 1 medium yellow onion, quartered
- 4–5 cloves Alstede Fresh garlic, peeled
- 3 tbsp olive oil, plus more for roasting
- 1 tbsp red wine vinegar
- 1 tsp smoked paprika
- ½ tsp salt, plus more to taste
- ¼ tsp black pepper
- ¼–½ tsp crushed red pepper flakes, optional
Optional traditional additions:
- ½ cup toasted almonds
- 1–2 tbsp chopped fresh parsley
Directions
- Roast the vegetables:
Preheat oven to 425°F. Arrange peppers, tomatoes, onion, and garlic on a large baking sheet. Drizzle with olive oil and season with salt and pepper. - Cook until caramelized:
Roast for 30–40 minutes, turning the vegetables once, until the peppers are tender and the edges of the vegetables are nicely browned. - Blend:
Transfer the roasted vegetables to a food processor or blender. Add red wine vinegar and smoked paprika. Add almonds and parsley, if using. - Adjust the texture:
Blend until mostly smooth but still slightly textured. Slowly add a little more olive oil if needed to reach your desired consistency. - Taste and finish:
Adjust salt, pepper, vinegar, or red pepper flakes to taste.

Storage Tips
Refrigerator:
Transfer the cooled sauce to an airtight container and refrigerate for up to 5 days. A thin layer of olive oil over the surface can help reduce air exposure.
Freezer:
For longer storage, freeze in small containers or ice cube trays for convenient portions. Once frozen, transfer cubes to a freezer-safe bag or container. Use within 3 months for best quality.
