Alstede Fresh Creamed Corn

Serves: 6
Ingredients:
8 ears of Alstede Fresh sweet corn, husked
2 tbsp unsalted butter
1 small sweet onion, finely diced
2 cloves garlic, minced
1 cup heavy cream
2 oz cream cheese, softened
2 tbsp grated Parmesan cheese
1 tsp fresh thyme leaves
½ tsp kosher salt (or to taste)
¼ tsp freshly ground black pepper
2 tbsp chopped fresh parsley or chives, for garnish
Directions;
Cut the kernels from the corn cobs, then use the back of your knife to scrape the cobs to collect the sweet corn “milk.” Reserve both.
Melt butter in a large skillet over medium heat. Add onion and cook until soft and translucent, about 4–5 minutes. Stir in garlic and cook for 30 seconds.
Add the corn kernels and corn milk. Cook for 5–6 minutes, stirring occasionally, until the corn is tender.
Reduce heat to low. Stir in the heavy cream, cream cheese, Parmesan, thyme, salt and pepper. Simmer for 3–5 minutes until thick and creamy.
For an extra-creamy texture, blend about one-third of the mixture with an immersion blender or transfer it carefully to a blender, then stir it back into the skillet.
Garnish with fresh parsley or chives and serve immediately.
