An Alstede Fresh, simple dip that highlights the sweet flavor of just-picked spinach with bright herbs and a touch of lemon. Perfect for crackers, fresh veggies, sandwiches, or warm pita.
Ingredients
- 4 cups fresh Alstede Farms spinach, roughly chopped (about two bunches)
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 cup whipped cream cheese or Greek yogurt
- ¼ cup grated parmesan cheese
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt
- Fresh cracked black pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Add spinach and cook just until wilted, about 2–3 minutes. Let cool slightly.
- Fold spinach into the softened cream cheese or yogurt along with parmesan, herbs, lemon zest, lemon juice, salt, and pepper.
- Chill for 15 minutes before serving for best flavor.
