Creamy Spinach & Herb Farm Dip

An Alstede Fresh, simple dip that highlights the sweet flavor of just-picked spinach with bright herbs and a touch of lemon. Perfect for crackers, fresh veggies, sandwiches, or warm pita.

Ingredients

  • 4 cups fresh Alstede Farms spinach, roughly chopped (about two bunches)
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup whipped cream cheese or Greek yogurt
  • ¼ cup grated parmesan cheese
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt
  • Fresh cracked black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add spinach and cook just until wilted, about 2–3 minutes. Let cool slightly.
  4. Fold spinach into the softened cream cheese or yogurt along with parmesan, herbs, lemon zest, lemon juice, salt, and pepper.
  5. Chill for 15 minutes before serving for best flavor.

Serving Ideas

  • Serve with fresh veggies
  • Spread onto toasted sourdough bread (available in our market)
  • Spoon onto baked potatoes or grilled chicken for added flavor and nutrition
