Honey Apple Cider Carrot Slaw

A crisp, refreshing farm-fresh slaw that highlights the natural sweetness of homegrown carrots with a bright honey apple cider dressing. Perfect alongside grilled dishes, sandwiches, burgers, or picnic favorites throughout the season.

Ingredients:
For the Slaw
6 cups Carrot, freshly shredded
1 crisp Apple, julienned or thinly sliced
1 cup red cabbage, thinly sliced
3 scallions, thinly sliced
¼ cup fresh parsley, chopped
¼ cup toasted sunflower seeds or pumpkin seeds

For the Honey Apple Cider Dressing
¼ cup farm-fresh apple cider
2 tablespoons local honey
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
½ teaspoon sea salt
¼ teaspoon black pepper

Directions:

In a large bowl, combine the shredded carrots, apple, cabbage, scallions, parsley, and seeds.
In a small jar or bowl, whisk together the apple cider, honey, apple cider vinegar, olive oil, Dijon mustard, salt, and pepper until smooth.

Pour the dressing over the slaw and toss until evenly coated.
Let the slaw chill for 15–20 minutes before serving to allow the flavors to blend.

Serving Suggestions:
This sweet and tangy carrot slaw pairs beautifully with grilled chicken, pulled pork sandwiches, burgers, or farm picnic fare. It also makes a refreshing topping for tacos or wraps.
