Strawberry Salad with Honey-Apple Cider Vinaigrette
Fresh, colorful, and packed with seasonal flavor, this salad brings together tender Boston Lettuce, sweet strawberries, crunchy nuts, and a tangy homemade vinaigrette made with our farm’s apple cider and honey. It’s perfect as a light lunch, side dish, or topped with your favorite protein for a complete meal.
Ingredients
For the Salad
8 cups Alstede Fresh Boston Lettuce, washed, dried and torn into pieces
2 cups Alstede Fresh Strawberries, sliced
½ cup red onion, thinly sliced
½ cup Springhouse Creamery Cheese Curds, sliced in half
½ cup toasted pecans or walnuts
Optional: avocado slices
For the Honey-Apple Cider Vinaigrette
¼ cup Alstede Farms Apple Cider
2 tablespoons Alstede Farms honey
2 tablespoons apple cider vinegar
⅓ cup olive oil (try Walnut Oil)
½ teaspoon Alstede Farms Honey Mustard
Salt and freshly ground black pepper, to taste
Directions
- In a small bowl or jar, whisk together the apple cider, honey, apple cider vinegar, mustard, salt, and pepper. Slowly add the olive oil while whisking until the dressing is smooth and emulsified. You can also use your food processor or blender.
- In a large serving bowl, combine spinach, strawberries, red onion, cheese, and toasted nuts.
- Drizzle with the vinaigrette just before serving and toss gently to coat.
- Serve immediately and enjoy the flavors of the season.
