Ingredients:
For the Slaw:
5 cups Carrot, shredded
2 cups Strawberry, sliced
1 cup red cabbage, thinly sliced
3 scallions, thinly sliced
¼ cup fresh mint or parsley, chopped
¼ cup sliced almonds or sunflower seeds
For the Honey Poppyseed Dressing:
3 tablespoons local honey
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon poppy seeds
¼ teaspoon sea salt
Fresh cracked black pepper to taste
Directions:
In a large bowl, combine the shredded carrots, strawberries, cabbage, scallions, herbs, and almonds. In a small bowl or jar, whisk together the honey, apple cider vinegar, olive oil, lemon juice, poppy seeds, salt, and pepper until well blended. Pour the dressing over the slaw and toss gently until evenly coated. Chill for 10–15 minutes before serving to allow the flavors to come together.
