Farm Fresh Vegetable Machboos Recipe
Ingredients:
2 tablespoons olive oil
1 large onion, diced
4 cloves garlic, minced
2 carrots, sliced
1 zucchini or summer squash, chopped
1 red bell pepper, chopped
2 tomatoes, diced
1½ cups basmati rice
3 cups vegetable broth
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
½ teaspoon cinnamon
¼ teaspoon cardamom
Salt and pepper to taste
Fresh parsley or cilantro for garnish
Lemon wedges for serving
Directions:
Heat olive oil in a large pot over medium heat. Sauté onions until softened and lightly golden.
Add garlic, carrots, squash, peppers, and tomatoes. Cook for 5–7 minutes until vegetables begin to soften.
Stir in turmeric, cumin, coriander, cinnamon, and cardamom until fragrant.
Add rice and stir to coat with spices.
Pour in vegetable broth and bring to a simmer. Cover and cook on low for 18–20 minutes until rice is tender.
Fluff gently with a fork and garnish with fresh herbs and lemon wedges before serving.
