Alstede Fresh Spinach Wrap

3/4 C roasted Garlic Hummus (available in our markets)
1/3 C sliced Alstede Fresh scallions
1 bunch Alstede Fresh Spinach
2-3 Tsp olive oil
1-2 Tsp lemon juice
1/2Tsp salt or to taste
1/3 C Feta cheese
1/2 tomato sliced
8-10 Sliced Greek Olives
1/4 medium red onion thinly sliced
Thin slices of half of a seeded cucumber
3 Whole Grain Wraps or Tortillas

Prepare or purchase roasted garlic Hummus and mix in sliced scallions, set aside.
In another bowl place the cleaned fresh spinach, add the olive oil and gently mas-sage the spinach for 3-5 minutes.
Spinach will break apart and the texture will soften. Mix in the lemon and salt and set aside.
Next spread the hummus onto the wrap to within an inch of the edge. Top with spinach down the center of the wrap then continuing to add the cheese, tomato, olives, cucumber, and onion in layers. Feel free to omit or substitute ingredients as desired. Fold over one side of the wrap to completely cover the fill-ing. Fold in the sides and continue to roll forward until closed. Secure with a toothpick, cut in half, and serve immediately.

Farm kitchen hint: This wrap should be served when prepared for optimum taste. If looking to pack for later, keep filling ingredients separated from wrap and assemble just be-fore eating using instructions above.
Makes 2 servings. Recipe can be doubled for more servings.
