Green Bean Walnut Pate

Once again we send out thanks to Jinnie McDonnell for sending in some of her favorite recipes this season. She has been making and freezing the pate for later in the season.  Great to hear from another CSA member!

Ingredients:

1# green beans
1/2 cup walnuts
1 tablespoon fresh parsley, or any fresh herb you have around
1 tablespoon fresh coriander, or any other fresh herb you have around
2 garlic cloves
1 or 2 tablespoons water 1 tablespoon red wine vinegar
salt & pepper

Instructions:

Cook the beans in a little water for 7-8 minutes until soft. Drain, then dunk in cold water and drain again. Whiz the walnuts in a food processor until fine and crumb-like. Add the garlic, coriander and parsley and whiz again. Add the beans and whiz again until you have a smooth puree. Add a tablespoon or two of water until you have a mayonnaise-like consistency. Stir in the red wine vinegar and add a little salt and pepper to taste. Serve at room temperature as a side dish; use as a sauce for rice or pasta. Freeze and use in the winter.
