Grilled Peach Salad
Peel and slice peaches in half, remove the pit. Brush with some extra virgin olive oil, and a bit of salt and pepper. Preheat the grill to medium.
Grill peaches on each side for 3-4 minutes
To serve, simply shave over some parmesan, or other hard salty Italian cheese, or serve over a salad that has been simply dressed with a little lemon juice, olive oil and salt.
Grilled Peach Salsa
Brush pitted and peeled peach halves with some olive oil, and sprinkle with a bit of salt all over. Grill over medium heat for about 2-3 minutes per side
Let cool, and then chop, and mix with juice from ½ a lemon, a bit of finely chopped red onion, a little chopped fresh mint or cilantro, and salt to taste. This is great with grilled pork or of course grilled chicken.
Grilled sweet peaches for dessert
Coat the peaches in melted butter, Grill on the pit side for 2 minutes. Turn and sprinkle with a generous coating of brown sugar. Grill an additional 3- 4 minutes.
Serve warm with vanilla ice cream.
