Heirloom Tomato Bruschetta

We love making and serving this colorful dish at any time of the year. Packed with farm fresh flavor and phytonutrients, this dish can be enjoyed as an appetizer or served with a hearty soup for a satisfying meal.


One pint of heirloom cherry tomatoes, chopped into ½ pieces ( we like to use a variety of colors for added appeal)
One half of a small red onion, finely chopped
4 leaves of fresh basil, finely torn  (can be adjusted to your liking)
1 Tablespoon grated cheese (optional, can be left out for a dairy free meal)
Salt & pepper to taste
Olive oil & vinegar or Alstede fresh bottled dressing
Fresh garlic clove, peeled and kept whole
One French Baguette


Mix above ingredients in a bowl adding in a pour of good olive oil and vinegar to make a simple dressing to coat contents (save time and use Alstede Farms bottled dressings instead).

Thinly slice the baguette & rub each slice with fresh garlic clove on one side. Add a generous spoonful of  mixture onto each slice of bread and serve immediately.
