Maple Balsamic Roasted Brussels Sprouts

1 lb. Brussels sprouts, halved
2 tbsp coconut oil, melted
1 tbsp pure maple syrup
1 tbsp balsamic vinegar
1/2 tsp salt
Pepper, to taste

Preheat oven to 400. Trim the Brussels Sprouts and cut the larger sprouts in ½. Toss the sprouts with the maple syrup and the balsamic vinegar. Sprinkle with salt and pepper.
Spread the Brussels sprouts in an even layer cut-side down on a parchment lined – baking sheet.
Bake for 10 minutes, stir and lower the heat to 375 and bake for an additional 10 – 15 minutes.

Optional: toss with 1/2 cup toasted walnuts and 1/3 cup dried cranberries after cooking for a more festive dish.
