Roasted Asparagus

Pan Roasted Asparagus

12-14 spears of asparagus, tough ends removed
1 T olive oil
Kosher salt and fresh ground pepper to taste

Place a large pan over medium heat and drizzle with olive oil.
Add the asparagus and placing it in a single layer across the pan.
Allow to cook for a few minutes, turning each spear at least once.
Place the lid over the pan and allow the asparagus to cook for 2-3 minutes.
Asparagus should be bright green and tender. Cover for an addition minute
or two for desired texture. Sprinkle with salt and fresh ground pepper to taste
Drizzle with a little lemon when ready to serve.
