Many thanks to Carolyn Campbell for sending in this Peach Pie Recipe that is a little different!
5 Cups of peeled and sliced peaches
1/3 Cup of Butter or Margarine ( I use butter )
1 Cup of sugar
1/3 cup of flour ( I use Wonder )
1 Deep dish bought or made pie crust
for this pie I use bought – easier.
Put sliced peeled peaches in pie shell,
Melt butter in small sauce pot, add sugar, flour and slightly beaten egg, stir constantly on low to med heat till sugar is completely melted. Will burn quick so stir till dissolved, then pour over peaches. May overflow so best if put tin foil on cookie sheet and place on that to bake. (That’s what I do)Hate the mess if it drips.
BAKE at 350* for about 1 HR and 10 min.
I love the pie cold, my husband likes it room temperature, the sauce that you cook to pour over the peaches before baking makes the crust taste sooooo! Good.
I have used less peaches and added blueberries on the bottom of the pie shell first, just enough to cover the bottom, as a change to see what it would taste like. Also very good.
