Radish Salad

Alstede Fresh Radish Salad

3 T Alstede Fresh apple cider
2 T fresh lime juice (can substitute lemon juice or balsamic vinegar)
1 T Pomegranate Juice (can substitute orange juice if desired)
2 T olive oil
1 1/2 teaspoon Alstede Farms honey
Pinch of Kosher salt and freshly ground black pepper
1 bunch of radishes trimmed, thinly sliced
1 small cucumber, peeled & thinly sliced
2 sprigs Alstede Fresh cilantro leaves
1/4 c finely chopped red onion

Whisk all wet ingredients together in a large bowl until completely blended. Season with salt and pepper at this stage.
Add in the radish slices, cucumber slices, cilantro and red onion and toss to mix. Place in the refrigerator for at least one hour for all the flavors to combine.

Farm Kitchen Tip:
This salad can be served cold or allowed to come to room temp. To store radishes – Remove the tops. The leaves will take moisture and nutrients from the radish, place the radishes in a plastic bag and put them in the refrigerator. Do not clean them first.
