Raw Snap Pea Salad

Some of the vegetables that we eat daily should be served raw!

In a large bowl, combine:

1 pound trimmed sugar snap peas (strings removed sliced on the diagonal)
1 cup finely chopped red onion
2 tablespoons lemon juice
3 tablespoons olive oil

Season with kosher salt and pepper, let stand for 30 minutes.
Toss occasionally.
Serve on a bed of fresh lettuce
