Skillet Peach Pudding

Ingredients:
5 large ripe peaches
1 cup sugar
1 cup brown sugar
1/2 cup butter
3 eggs, beaten
3 Tablespoons milk
1 cup flour
1/4 tsp baking powder
Pinch of salt
Cast iron skillet

Instructions:
Melt in skillet: 1 cup brown sugar and 1/2 cup butter
Slice peaches, skins removed, and arrange on top of the sugar/butter mixture.
Mix the following in a bowl: 1 cup sugar, 3 beaten eggs, 3 Tablespoons of milk, 1 cup flour, 1/4 teaspoon baking powder, a pinch of salt.
Pour the mixture over the peaches.
Place skillet in oven at 375 degrees for 40 minutes.
We suggest adding a piece of aluminum foil or a pan under the skillet for easy clean up in the event the mixture runs over the pan when baking.

Farm Kitchen Tip – This is one of our all time favorite recipes from our Farm Steward Sam Walmer. His great grandmother would have prepared this recipe on a coal stove. Farm Steward Sam recalls his grandmother serving this dish as a hearty breakfast before his family would farm the family orchards. This recipe works best in a well seasoned cast iron skillet, if you don’t have one, you may substitute a Dutch oven or regular oven plate.
