Tatsoi Salad

Tatsoi Two Ways (spinach or other greens can be substituted for tatsoi)

Alstede Farms Tatsoi Tuna Salad
Ingredients:
¼ cup olive oil
2 T lemon juice
¼ t Dijon mustard
¼ t coarse salt
drizzle of Alstede Fresh honey, optional
2 bunches Tatsoi (or other greens)
¼ cup torn basil leaves
1, 5oz- can Italian Oil Packed Tuna
¼ red pepper cut in julienne slices
A handful of cherry tomatoes sliced
1-2 T capers
few black olives sliced

Instructions:
Whisk together the dressing ingredients and set aside. Place the tatsoi leaves in 2 serving bowls or plates, sprinkle with basil and drizzle with a little dressing.
Top with the drained tuna. Continue to layer on the remaining vegetables.
Drizzle with a little more dressing and serve with crusty Italian toasts.
This recipe serves two as a main meal. You may double the recipe to accommodate more people.

Alstede Farms Tatsoi Orange Salad
Ingredients:
1-2 bunches Tatsoi
1 naval orange
1/3 cup chopped or sliced almonds toasted
½ lime
Alstede Farms Honey

Instructions:
Place the tatsoi leaves on the serving dish. Peel the orange removing as much pith as possible. Slice the orange and arrange over the greens.
Sprinkle the orange and greens with lime juice. Top with the toasted almonds, drizzle with honey and enjoy.
Prepare this salad to serve immediately.
