Apple Chutney

Alstede Fresh Apple Chutney

1 T butter
1 T oil
3/4 c chopped yellow or white onion
2-medium-large Zestar apples, chopped
1/3-1/2 c raisins
1/4 c brown sugar
1/4 t allspice
1 t minced fresh ginger
1 1/2 T apple cider vinegar
1/4 c Alstede Farms apple cider
Juice of half an orange
1 t fresh orange zest
1 T lemon juice
1/4 t kosher salt
1/8 t cinnamon
1/8 t red pepper flakes
1/2 t prepared Dijon mustard

Instructions:
In a medium saucepan heat the oil and melt the butter. Add the chopped onion and cook over low to medium heat until the onion is softened.
Add the remaining ingredients and bring the mixture to a simmer. Stirring occasionally. Cover and simmer, low to medium, for 30-35 minutes, continue to stir occasionally. Uncover and simmer until all of the liquid is absorbed.
Salt and season to taste.

Farm Kitchen Tip: Chutney is excellent when served with cheeses, a smoked meat and cheese grilled sandwich, or charcuterie board. Try adding chutney as a side to pork roast or pork chops or
ham. When considering apples for this recipe, the apples should be tart: Zestar is an early tart variety. Cortland, Ida red, Granny Smith, later in the season.
